Ingredients
Dry ingredients:
1 1/2 cups organic spelt flour
1/2 cup organic quick cooking oats
1 tsp. baking soda
1 tsp. finely ground sea salt
2 shakes of organic cinnamon
1/4 cup coconut sugar
Wet ingredients:
1 1/3 cup high protein 2% milk
1 tsp. pure vanilla extract (no imitations, please)
1 beaten egg
1 small to medium mashed organic banana
4 tsp. unsalted butter
Preparation
In a large mixing bowl, put all the dry ingredients and pound out all the lumps with the butt end of The Porridge Mom spurtle. Then stir well and continue to pound out all the lumps.
In a large measuring cup pour the milk and add the beaten egg, vanilla extract and the mashed banana.
Pour the milk mixture with the melted butter into the dry ingredients and stir until just mixed. Do not overmix!
Using a large serving spoon, put the batter, one spoonful at a time onto a hot griddle. (I use a square griddle that holds four large spoonfuls.) When each one begins to bubble, flip to cook the other side.
Makes 14 golden griddle cakes that are absolutely delicious for the whole family. Serve with butter, clotted cream and yoghurt with frozen or fresh berry coulis and maple syrup.
Add some rashers of bacon for a complete brunch meal.
Quick Coulis recipe:
1 cup of frozen or fresh berries (blueberries are an excellent choice.)
1 tsp. salted butter
Put into a small pot or milk warmer and heat to a boiling point with the butter melted. Serve on pancakes, griddle cakes or a delicious sponge cake or Irish Tea Cake.
