Oat Banana Blueberry Loaf

1 Loaf


1 cup all purpose flour

1 cup homemade oat flour

1 tsp. baking soda

3/4 cup organic sugar

1 cup wild blueberries, fresh or frozen

2 eggs and add

2 large mashed bananas

1/4 cup sunflower oil


Stir dry ingredients thoroughly with your spurtle and then add blueberries and coat in flour. 

In a separate bowl, beat eggs, banana and oil. Then add to the dry ingredients and stir with your spurtle using a few swift strokes. Do not overmix.

Pour into a lightly greased load pan and bake for 1 hour at 350 degrees Fahrenheit or 176.7 degrees Celsius. When done rest for 10 minutes before turning out onto a cake rack and rest another 5 minutes before cutting and serving.

Top with butter or yoghurt and enjoy!
