Wild Blueberry Muffins

12 Muffins


1 cup freshly ground oat flour*

1 cup whole grain spelt flour

2 tsp. alum free baking powder

1 tsp. sea salt flakes

5 tbsp. coconut sugar

3 tsp. cinnamon

2 large eggs, beaten

1 cup milk

4 tbsp. melted salted butter


Put ingredients into a bowl and remove all the lumps by pressing the mixture against the side of the bowl with a large spatula. Stir in 3/4 cup wild blueberries

Stir the wet ingredients together and add to the dry ingredients with a few swift strokes. Pour into a 12 cup muffin pan or a 24 cup mini muffin pan. Bake at 400 degrees F for 20 minutes.

* Food process or finely chop 1 cup organic whole oats to make a delicious, nutty flour.
