Oat Spelt Peach Blueberry Pancakes

Ingredients

Dry Ingredients:

1 cup Organic Oat Flakes processed to make an oat flour in either a food processor or a chopper

1 1/4 cup wholegrain Spelt flour

2 1/4 teaspoons alum free baking powder

1 heaping teaspoon sea salt flakes

2 teaspoons Organic Sweet Ceylon True Cinnamon

1/4 cup Organic Coconut Sugar

Wet Ingredients:

1 cup almond coconut milk

2 large eggs

3 tablespoons salted butter, melted until liquified

1/2 cup frozen wild blueberries

1/2 cup chopped canned peaches

Preparation

Put all dry ingredients into a  large bowl and dry whisk until thoroughly mixed and no lumps remain.

In a large measuring cup, whisk the first three wet ingredients then add the fruit and lightly stir.

Pour the wet ingredients into the dry ingredients and fold until just mixed. Spoon into a low medium hot skillet. Flip each pancake when bubbles begin to form. Grill until golden brown!
