Oat Cinnamon Pancakes

Prep Time:

20 minutes

Makes:

10 Pancakes

Ingredients

Dry Ingredients:

1 cup freshly ground oat flour*

1 cup all purpose flour or spelt flour

1 tsp. Himalayan or sea salt

3 tbsp. sugar (coconut sugar is delicious)

2 tsp. baking powder

2 tsp. powdered cinnamon

Wet Ingredients:

1 cup 2%, coconut almond or oat milk

2 large eggs

1/4 cup melted salted butter

Preparation

While the butter is melting put all dry ingredients in a large bowl and using a rubber spatula, press out all the lumps.

Pour the milk into a large measuring cup and add the eggs. Beat well and add the melted butter.  Pour the wet ingredients into the dry mixture and stir swiftly until just mixed. A spurtle will make stirring fast and easy and can be purchased at my Shop link in the menu.
