Oat Chocolate Chip Muffins

12 Muffins

Ingredients

Dry ingredients:  1 cup Oat flour, 1 cup All-purpose flour, 2 tbsp. Baking powder, 2 shakes cinnamon, 1 tsp. sea salt, 1/3 cup coconut sugar and 1 cup high quality, semi sweet chocolate chips.  Stir well and breakdown all the lumps with The Porridge Mom spurtle!


Wet ingredients:  1 1/3 cup high protein milk, 1 beaten egg, 1/4 cup salted butter and 1 large well mashed banana.

Preparation

Put all the dry ingredients, except the chocolate chips, into a large bowl and stir well, mashing out all the lumps.  Then add the chocolate chips!


Melt the butter on low to medium heat!  In a large measuring cup, put the milk, the beaten egg and stir in the mashed banana.


Pour the milk mixture and then pour the melted butter into the dry ingredients and with The Porridge Mom spurtle, stir until just mixed. 


Using a large serving spoon, spoon the mixture into a greased 12 muffin, muffin baking pan. Bake at 400 degree Farenheit heat for 20 minutes. Use a toothpick inserted to test for doneness. If the toothpick comes out dry, the muffins are done.

Allow to rest for 10 minutes before turning out onto a rack! ENJOY warm while the chocolate chips melt in your mouth!
